Chef’s Hat: For a fast, easy, healthy dish, try salmon

The recent batch of bitterly cold days called for hearty meals, or maybe that was just an excuse to eat calorie-laden comfort foods or hearty soups with thick chunks of garlic bread.

With a bit of luck (and a lot of crossed fingers), the worst of the winter and those 20 below zero temperatures will be gone until next winter.

Once again, it was time to try some lighter dishes and hopefully start shedding pounds that accumulated during those long, bitterly cold days and nights. A good “diet” food and one with impressive health benefits is salmon. There is a long list of nutrients in salmon, including B vitamins, omega-3 fatty acids, protein and selenium. Some sources cite salmon as one of the world’s healthiest foods.
